Obertal Inn’s Breakfast – A Unique & Delicious Idea!
As our regular guests know, we regularly add new dishes to our breakfast menu. One dish in particular is very popular. We never even thought of an appropriate name for it. The essence of the dish is the base, which is our homemade Crème Fraiche. Crème Fraiche translates to “Fresh Cream.” The thing is, though, it is a super delicious cultured sour cream, made with heavy whipping cream.
This dish came to be when we were thinking about doing something super rich, but equally yummy to our breakfast. It also needed to be something that can easily refilled when the buffet runs low.
Dis dish has a base of our homemade Granola. We then top that with the delicious Crème Fraiche and top that with fresh sliced strawberries, or other topping when strawberries are out of season. And voila, a delicious, rich, unctuous breakfast item is born.
Since we were not able to purchase crème fraiche in the US, and when we were able to find it, it was prohibitively expensive. So we diced to make our own. If you are interested in making this, the recipe is pretty simple.
All you need is 1 or more cups of cream at room temperature and mix in 1T of buttermilk for every cup of whipping cream. Mix it all together and let sit at room temperature for at least 24 hours. The mixture will have thickened and soured slightly. We prefer to have ours sit on the counter for 72 days. The flavor becomes much richer and the sourness is more pronounced.
During the cold winter months, you can put it in the oven with the oven light on. This will keep the temperature at about 72F, which is ideal.
Once we have the Crème Fraiche made, we mix it with Greek Yogurt. 2/3 Crème Fraiche and 1/3 Greek Yogurt and we add a bit of sweetener to it. We’ve used honey, agave syrup, sugar, powdered sugar and others. You can use whatever you want.
By the way, Crème Fraiche is an excellent flavor enhancer for all sorts of things. We add it to creamy soups, sauces, particularly Turkey Gravy, etc. You can also whip this since it is whipping cream and use it to decorate a cake. Your guests will absolutely love it!
